waits for the wild

Made bread yesterday with friends. Basically we more or less followed this recipe.  TRU SOURDOUGH <3 <3 <3  TRU SOURDOUGH <3 is important because isolated yeast are thought to mess with your system. true sourdough waits for the wild.  In the early nineties, the man in these pics started what is now the River Street Bakery in Ypsilanti.  He remembered all the steps from memory and took his knowledge from an old lineage of Belgians.  We used a sourdough starter (desem) he had stored in a freezer since August 21st, 1991.  IT CAME BACK TO LIFE ...after a long, long suspension of life.
